How to disconnect Copilot From Any Connection to My Microsoft Account

I found that copilot has access to my email, it can read emails and attachments to summerize or do other things. I hate that this happening without clear indication that this is going to happen. I also hate microsoft products including windows 11 (for obvious reasons), and now even my outlook email privacy has been breached. However, this is to ask how can I disconnect copilot from my account and especially my outlook email. I do not need copilot, I never asked for it, I want to do my things my own way without microsoft AI assistant. How can I kill copilot connection to my account?
