I have cookies saved enabled, I can see them still saved in my browser, my passwords are still there, my history is still there, my profile is still synced
I just got logged out of all websites
no security or privacy apps/extinctions were running to clear cookies
so how do I fix this?

Like Google Chrome and other browsers, cookies can be erased once in a while when Windows or the Browser gets update. It is normal thing.
If it happens repeatedly, your antivirus might be playing a part. May I know one are you using?

Unexpected sign-outs usually mean either:
Since cookies, passwords, and history are still visible, focus on Edge’s profile, sync, and sign-in state.
If cookies and profile are intact but you were signed out once, it is typically a one-time session reset (for example, after an update or policy change). After re-signing into sites and confirming that Edge is not set to clear cookies on close, sign-ins should persist.
