I understand how frustrating it can be, especially when the setting appears to be enabled but Outlook still checks grammar.
I tested this on my side using a Mac device, and I observed the same behavior. When I select “Do not check spelling or grammar,” it disables grammar checking for the current email, but when I open a new message, even though the option remains checked, Outlook continues to check grammar. It seems to be the same behavior you’re encountering. I'm sorry for the inconvenience this has caused.
I also checked the available documentation, but I couldn’t find any official solution that addresses this behavior in the New Outlook for Mac. Therefore, I’d recommend submitting feedback on our Ideas · Community platform. This helps ensure your experience is seen by the product team and can improve the experience for others in future updates.
