why did my email layout suddenly change and how do I put it back to original format

My font and format in emails changed and I'd like it back to the default setting.

    Set your default font for email in Outlook for Mac 

    Access the Fonts panel  

    1. From the menu bar, go to Outlook > Settings. 
    2. In Outlook Settings, select Fonts. 
    3. In the Fonts panel, note the message types you can customize (e.g., New mail, Reply or forward).

    2. For New mail and Reply or forward, select the Font… button and pick your preferred Font and Size. 

    Adjust font size while reading messages in a folder 

    1. Select a message in your Inbox (or Sent, Drafts, etc.). 
    2. On the Format menu, choose Increase Font Size or Decrease Font Size.

    I dont want instructions for a MAC. Windows-PC please. And why without any changes would the format of emails change?
