To change your phone number that's connected to your email, you’ll need to update it through your Microsoft Account settings, since Outlook is tied directly to your Microsoft identity. Here's step by step:

• Go to the Microsoft Account page: https://account.microsoft.com
• Sign in with your Outlook email and password
• Choose Security info in the left pane > select "Change" next to your old phone number

• In the Phone box, enter your country and your new phone number > Next

• Verify the number by entering the code sent to your phone.
• Once verified, your new phone number will be linked to your email account.
